Family Favourites: Spanish Comfort Stew

For a taste of the med or to soften the holiday blues, this Spanish Comfort Stew is sure to cheer you up. It’s also the perfect quick meal to make for those cold Winter evenings. This one also tastes just as good without the chorizo, so if you’re Vegetarian – this one’s also for you!

Ingredients

2 tbsp olive oil

1 large red onion, peeled and chopped

2 cloves crushed garlic

3 large diced potatoes

1 tsp paprika

1 tbsp red wine vinegar

1 400g tin chopped tomatoes

1 400g tin chickpeas

60g diced chorizo (optional)

small handful chopped parsley

Serves 4 (depending on how hungry you are!)

Method

Over a medium heat, fry the onion and garlic in the oil until they start to soften.

Throw in the chorizo (if using) and fry for a couple of minutes.

Add the diced potatoes and stir in for 2 minutes before adding the paprika.

Now add the red wine vinegar, tomatoes, chickpeas and season generously.

Cover with a lid and simmer on a low heat for 30 minutes or until the potatoes are soft.

Finally, stir in the parsley and serve with a green salad or crusty bread.
